I have been to this Tea Merchant's shop in Taipei. It is wonderful. He makes everyone feel at home and the tea is the best ever. This is a family owned shop. They do it all: grow, pick, cure, package and sell the tea. Across the street (in the US we would say alley way) are two excellent restaurants) one serves dishes with noodles the other with rice. Taiwan is paradise.

I don't think this is a tea ceremony, I think it's a tea shop that has tea tasting before you decide which tea to buy. I would love a place like this to try out teas. The Yixing pots have a beautiful patina on them...very well used.

You're perfectly correct there. My favorite tea shop in Taipei, esp. their longjing 龍井. It's just that the owner, Mr. Chang, rarely lets me go before I taste some of his tea with his friends so I have to make sure I have enough time when I come shopping :)

Notice how the water he used to warm the pot was slightly darker before adding tea? These yixing pots are well seasoned indeed! I wonder how old they are....

It was such a mix of Japanese, Taiwanese, and Mandarin in the background that I got a headache! It was cool to see a few different types of teas though! It's not as elegant as formal ceremonies, but kinda cool how we can just do this at home without censorship!

anastasia10017 To make sure that the tea pots remain hot so that the tea that is to be drunk is kept hot. The same goes for the cups used for drinking. 😃

+Brian O'Donnell from what i gather he trying to use the bubbles as an indicator of how long it should brew. when u replace water in tea they unravel and an release oxygen. once that is done the bubbles should gradually disappear meaning fully steeped.

How can that tea ceremony be serious if the host is in a hurry. the purpose of tea ceremony is to stay in the present moment.

he is not performing the ceremony. He is just making tea. it looks like a commercial set up so he has been trained to meet the demand of a busy kitchen

this guy you know is the shop owner, he using way too much tea, and showing the improper technique, This way he is showing is burning the crap out of the leaves and extracting all the flavors on the first brew, leaving you with a concentrate of over taxing the kidney tea cup, You will die of kidney failure if you brew tea like this Tea shop owner who just wants to Sell more Tea.

台湾人のコメントだと「ガサツだ」的な厳しい感じだけど、このお茶屋さん、茶葉を惜しまず多めに使い、熱湯で短時間入れるなど、お茶を美味しく入れることについては真面目な印象。洗茶しないのは意外だけど。 5:38ごろ、茶壺にお湯を入れて捨てただけで水に色がついてるけど、何十年も茶壺でお茶を入れるとお湯を入れただけでお茶が出るっている格言の域に達してるんだなあと思った。一度行ってみたい。

箸先で妙な説明してるけど、茶海を暖めないし仕草が荒っぽいし、茶芸館と見たら結構ぬるいところですね。お茶っ葉を売るお土産屋さん的な印象でした。
