Sweet Potato Taco Meal (easy Paleo dinner for your family!)

Searching for an easy paleo dinner recipe that can be made on a weeknight AND that your entire family will love? This Sweet Potato Taco Meal is a great choice and can be customized to your needs.
Paleo, Whole30, and Gluten-free with AIP modifications
(To make AIP-friendly: Omit the tomatoes, use an AIP-friendly taco seasoning, and either use a compliant yogurt or use plain coconut milk or tigernut milk for the sauce)
Basic Recipe:
• Approx 1 small-medium Sweet Potato per person
• Avocado Oil (or fat of choice)
• Sea Salt
• 1-2 lb Ground Beef (or your ground meat of choice)
• 1-2 tbsp Taco Seasoning (I like Primal Palate's amzn.to/3GR8RPT )
• Toppings of choice - cherry tomatoes, cilantro, red onions, avocados, olives
• Sauce - dairy-free yogurt (or mayo) + juice of a lime + pinch of sea salt
Preheat the oven to 425 F. Cut the sweet potatoes into wedges, toss with avocado oil and sea salt and then place on a parchment-lined sheet pan. Bake for 35 minutes. Meanwhile, prepare desired toppings and mix up the sauce. Brown the ground beef, add the taco seasoning and a few tablespoons of water and simmer until the sweet potatoes are done.
Assemble by putting several sweet potato wedges on a plate, then adding a portion of ground beef, and then adding your toppings and sauce.

    Oh my goodness! That's such a tasty looking dish! I'm starting intro on AIP, but if I tweek this it's gonna be pretty good. 😋 I'm just sad that I need to finish all my previous prepped food before I can try this.

    Hi Michelle thanks this looks delicious I'll be making it this week. I wanted to ask you about tomatoes. I was told I can't eat them if I have Hashimotos. Is this true. I'm hoping it's not true! I miss tomatoes!

    No, while some people can't tolerate nightshades (which includes things like tomatoes, peppers, etc), that's definitely not a blanket statement for ALL people with Hashimoto's. I mean, I have Hashi's and eat tomatoes all the time and am just fine 😀 But if you eat them and either notice symptoms afterwards or are still not feeling your best, then it might be worth removing them for a bit (a month is fine) just to see if they affect you. Otherwise I wouldn't worry about it - there's a LOT of misinformation out there about what affects the thyroid and a lot of it doesn't apply to an autoimmune version of thyroid disease like Hashi's or Graves (like the don't eat broccoli, cabbage, etc thing -that's BS too)

    I used Forager Cashewmilk, which techincally is not 100% Paleo because it has locust bean gum, but I don't worry about things like that. If you're on Paleo to decipher if you have a food intolerance or are actively trying to quell a flare-up of symptoms then I'd probably go more for Cocoyo which is 100% compliant, or make your own.
