For the Potato Pig: would be cool when it also rises it one Eyebrow when looking at the player just like in the April Fools Snapshot
The ears are throwing me off on the pig a bit it kinda looks like a wombat, other than that I like your textures on the cows and the variations. I think Minecraft needs some mob variation like they are doing w dogs
