Hi Ruby, thank you for sharing the recipe and showing us how you make this beautiful desert. This will make my wife very very happy and I look forward to surprising her but I just need to ask a question... what type of carrots are you using - I suspect they are Indian because I doubt the regular ones we get over here in the UK would stay so brightly coloured after being cooked and Indian carrots taste a lot sweeter.
