These delicious german cookies are called Ochsenaugen or Pfauenaugen. The cookies are made of shortcrust pastry with a ring made of marzipan macaroon mass and a redcurrant jelly mirror.

1 teaspoon of baking powder
100 g / 3.5 oz of sugar
1 packet of vanilla sugar
pinch of salt
1 egg
2 egg yolks
150 g / 5 oz cold butter
For the marzipan macaroon mixture:
600 g / 20 oz marzipan
3 to 4 egg whites depending on the size of the eggs
To brush:
3 tablespoons apricot jam
1 tablespoon water
For the fruit jelly filling:
200 g / 7 oz redcurrant jelly
