Love beets, delicious 😋
Beautiful recipe. But I have to say, this is the first time I’ve ever seen anyone roast beets before peeling them. All my life I’ve been cleaning beets and then roasting them. I don’t think one way is better than the other, I was just noticing it. Great job! ❤

Thank you! I've always roasted washed (but unpeeled) beets if I'm roasting them whole. The skin slips off remarkably easy and the beets stay lovely and moist.
