Hard-boiled egg is so soft, so she's not so much cutting or chopping as gently pushing the knife. I do this all the time.

Japanese mayonnaise is called Kewpie. It goes well on almost everything!!

I have that “problem” where I like to eat the same thing every day. Habit makes me feel safe and comfortable, plus I like what I like. Make yourself something pretty instead- maybe he’ll see what he’s missing and want to switch it up sometimes. :)

Years ago, when we first moved in together, I made both our lunches every day - for about a month. My husband started complaining he didn't want to work in the afternoon after his lunch. 20 years together and he makes his own damned lunch for work ever since. Vegemite sandwich, ANZAC biscuit, banana, apple. Every. Single. Day. I would go mad.

I once did a salad similar to yours for lunch break at my university, but it didn't go well... After staying in a box for more than 4 hours, trust me when I tell you everyone will turn and look around wondering were that smell comes from lol but if you have your own office or eat in an open space than it's totally fine😊
