Stuffed Peppers with Ground Beef and Rice
Ingredients:
ground beef (80% lean/20% fat) - 1 lb (454 g)
bell pepper - 6 (large)
carrot - 1 (large)
garlic - 3 clove
rice - 1/2 cup
canned tomatoes (diced and peeled) - 400 ml
chicken broth - 1 1/2 cup
dill (fresh) - 1 bunch
salt - 1/4 teaspoon
vegetable oil - 3 tbsp
black pepper (to taste)
oregano - 1 tsp
thyme - 1 tsp
Steps:
1. Chop 3 cloves of garlic.
2. Chop 1 bunch of dill.
3. Grate carrot (large holes).
4. Cut out the core of the bell peppers.
5. Remove the core and all the seeds.
6. Add 3 tablespoons of vegetable oil to the frying pan.
7. Cook beef for 6-8 minutes (medium heat).
8. Season with salt (1/2 tsp) and black pepper (to taste).
9. Add thyme and oregano (1 tsp each).
10. Add chopped garlic, grated carrot, diced and peeled tomatoes to the frying pan.
11. Take 1/2 cup of rice (Basmati is used in this video) and cook for 10 minutes. Add cooked rice to the beef mixture.
12. Add chopped dill.
13. Stuff the peppers loosely.
14. Pour 1 1/2 cup of Chicken broth over the stuffed peppers.
15. Bake the peppers for 50 minutes at 350°F (180°C).
