When we lived in Cyprus in the olden days, we didn't have an oven and my yiayia, as well as my mother and everyone else in the neighbourhood would take their Sunday roast in the local "Fourno" Sunday roast was very rare those days for a lot of people as we were very poor! But be sure that no matter what, I will always be visiting, Your's and Carl's channels. The reason we keep the tops on, I should imagine you have already guess it, mainly is to prevent them going dry, especially the rice burns and goes really hard on the top. Also, like you said dear Nancy, they do look better, and decorative. Am glad you already make them. Everything else will be very easy for you.
