    Did the same but with coconut water and freshly made water kefir. It’s absolutely amazing. Pineapple soda is so refreshing. I need to try pineapple Kvass & tepeche next.

    I got inspiration from your recipe so I'm making my bug tomorrow morning and I was planning to make a Hibiscus syrup ginger soda or pomegranate syrup ginger soda!.... cant wsit for the buggies to be ready it might take so long I live close to the mountains of Yosemite so we are freezing!     Thank you for this lovely recipe and clear explanations!! I was stuck at the boiled strawberry mixture stage, getting paranoid that I added too much sugar\weighed too much ginger bug and that my bottle will explode lol! I think I will burp it every 6 hours just to be safe, plus it's hAWT today. Hope you have a lovely day!

    New sub to your channel and have tried servals of your recipes and they all have came out great. Except the avocado 🥑 icing, I think I didn't purée the avocado enough. However my son loved the avocado cake. Have you created a recipe book yet? I would buy it.

    Thank you! I use recycled bottles that contained everything from soda to maple syrup. You can find them in thrift stores often. You can also use a plain old recycled plastic bottle with a screw top lid.

    Hi, thanks for your videos! I was just wondering why we have to boil the strawberries? Could I put the strawberries in a blender with water and then strain the purée? Do we have to cook the fruit? I just thought it might be healthier raw

    You’re welcome! And yes, you can use raw juice to make ginger bug sodas...anything you want, as long as you use the formula of 1 quart of liquid : 1/2 cup sugar : 1/4 cup ginger bug.

    I have not worked with kombucha bottles so I honestly don’t know. I don’t see why they couldn’t be used as kombucha is so similar to ginger bug :) I hope this helps.

    Ok, so I did everything as directed.. my strawberry wart tasted awesome. I could have drank it without fermentation. Anyways I add my ginger bug I bottled it and the next day when I went to burp it (2nd time) it was completely carbonated and nearly over flowed, super fizzy. So I capped it again and next day tasted it.. it has a strange chemical like taste.. is that normal? Its looks like yours.. its fizzy and everything. Should i dump it and try again?

    Ohh.. and when I capped it again I put it in the fridge. So fermented one day it was carbonated, then a day in fridge.. still fizzy, slightly sweet.. has a strawberry taste but also has some sort of chemical taste.. hard to describe.

    Boil the bottle. Fermentation which is what happens here is prob best to use a boiled bottle. It will sterilize it from foreign bacteria which can cause botulism. Wash the fruit, and do not use metal when stirring the ginger bug. Define chemical as well since that could mean a whole host of things. If it is sour, the alcohol is soured/spoiled.

    When you said burp it every 8 hours, that's after the bubbles form on the soda's surface, right? I am guessing so because of the lemon-lime soda video you posted

    Correct! No need to burp the bottles if there are no bubbles. Once you see lots of bubbles, chill the soda in the fridge. Fermentation will slow down and you won't need to burp them so much. Try to drink it within 3 days...hope this helps :)

    Anything fermented with yeast will contain alcohol. It is an unavoidable byproduct of the yeast eating the sugar. How much alcohol on the other hand is a different story. In the United States anything 1% alcohol by volume and under is considered non alcoholic. If you only let the soda ferment for a few days before putting it in the refrigerator and drink it within a month you should be under that 1% mark.

    1 out of 3 of my bottles exploded after less than 2 days of fermenting and ruined my lament wood floors. I burped my bottles everyday but was a few hours late the 2nd day. My house temp was 74 degrees. Keep an eye on your bottles.

    Oh no! I am sorry that happened to you. Did you use food grade quality bottles? Normally that wouldn’t happen as the glass is made for high pressure ferments. Thank you for sharing your experience, I will be sure to stress quality bottles in the next ginger bug video 😀

    I had to burp my bottles every 4 to 6 hrs and then then they just kept bubbling over. I think my ginger bug was too strong. So next time (today), I just plan to use less bug and sugar.

    Make sure to use the really thick pressure safe bottles or even old soda or kombucha bottles. I use old Grolsh style swing top beer bottles. Another hint is to use a plastic soda bottle as a tester. Leave a headspace of a couple of inches, squeeze all of the air out then tighten the lid.

    Hi Paul, I have made this strawberry soda recipe and I left in the bottles for 2 weeks but it was not fizzy as your video. It is winter in my country but it is not cold (15-18 C). I have lived in London for many years and it is really cold. Can you help me to make this rcipe more fizzy please? Thank you very much.

    Hi! The temperature you mentioned is pretty cool. If you can put it somewhere warmer it might help. Sometimes if the bottles are not absolutely cleaned and rinsed, (1000%!) bacteria or soap residue can kill it. Also, does it happen to be in direct sunlight? If so, that could be the reason. Fermentation has a hard time in direct sunlight. I would say if it doesn't ferment, don't give up and keep trying!

    Great video and would love to make this but, as somebody who is pre-diabetic, I need to be careful of my sugar intake! Do you know how much sugar is remaining in the final product and have you any tips to reduce the sugar content whilst keeping the lovely taste? I have been Keto for a while now so my sweet tasting buds aren't so sweet any more. I would probably prefer something not so sweet.

    Thank you! I have dropped the sugar down to 1/3 cup and it still tastes fine. The sugar is important for fermentation so you don’t want to reduce it too much.     @@ICookAndPaint Thank you so much for taking the time not only to reply, but to search out another video regarding sugar content in the final product! Much appreciated. I'm guessing the same would apply for most recipes that use the ginger bug as the starter? I am from the UK so have to search out what 1 cup of water or sugar is in mg or millilitres but here goes: - 1 cup of water = 240 ml.... 1 cup of sugar = 200grams...4 cups halved strawberries = 300grams - Your recipe was 4 cups water = 1 litre (I've added a bit for the juice of the strawberries). _ You added 1/3 cup sugar = 64 grams of sugar. Cronometer states 64 grams of carbs, as sugar is the base rate for carbs. - Strawberries have a natural sugar: 300gr = 16grams sugar. - That means there is a total of 80 grams sugar (20 teaspoons) for 1 litre of strawberry soda. If only 5% remained, there would be only 4 grams remaining. That sounds too good to be true but the only way I guess would be to get it tested, or drink a bottle and test the rise in blood glucose?? One could also play around with the recipe to reduce even further, so long as the taste was still to ones liking. A straight ginger ale without the added strawberries would be even less. Cheers...🍻

    @@ICookAndPaint Just another thought: Once finished, what is the longest you have left it before drinking? Would it still be ok after 1 month? If you were storing for 1 month or more would you store it at room temperature, a cool place or refrigerator? I am presuming that the starter is eating the sugar the entire time of storage?? When has been the cut off time to drink, I mean at what stage does the drink lose all of it's sweetness? Sorry for so many questions but I find myself fascinated by the entire process!

    Once it’s bubbly (after 1-7 days) I refrigerate it and try to drink it within 3 days. Yes, the starter keeps eating the sugar-even when it’s in the fridge-and I find after 3 days it starts to taste not so good. One month would be way too long, in my opinion not drinkable. This is why I only make small batches. I hope this answer helps :)

    Thank you so much!! :) Ginger bug sodas are usually good in the fridge for only a few days, maybe one week. The ginger bug keeps eating the sugar and your drink becomes less and less sweet, eventually tasting like alcohol. That's why my recipes only make 1 quart, but you can always double or triple.

    My first batch was very sad, I think my ginger bug was playing a prank on me. It was all bubbly and feisty, but after 7 days my sodas were still extremely lackluster. I kept feeding my bug, thinking, ok, maybe it's just not strong enough yet. Dude, my next batch took off like a freaking rocket. Just made the strawberry version the other night, and in 24hrs my plastic soda bottles were back into shape (squeezed out the excess air). Is this possible? I mean, are they actually finished fermenting or should I release the gas (and continue to do so) for a few more days?

    In my experience, some soda flavors carbonate better than others. When I make the strawberry soda, it always takes off like crazy (overnight, sometimes in the same day). Yet some are not as fizzy. I believe it has much to do with the type of sugar used. Plain white granulated sugar seems to work best, brown sugar works too but not as aggressively. The ones that work the least are artificially sweetened beverages (you can carbonate sweet drinks that are commercially prepared if you don't want to make your own wort). Once the soda is carbonated, I always put them in the fridge and consume them within a few days. Refrigerating them slows down the fermentation process to they don't turn to alcohol. This is why I only make small amounts :)

    I used plain white sugar both times, white and brown are the only options here, no fancy rapadura or sucanat available. Made a batch of lemon iced tea yesterday, same bug/sugar, and it has yet to show signs of life. Maybe the bacteria/yeast get a bigger boost off the sugary fruit juice. I already make my own kefir and yogurt, I'd never feed artificial junk to a living organism, that's just mean ^_^ I do have a commercially prepared fruit juice blend I've been wanting to try this with, so looking forward to that. No additives or added sugar, of course. I went ahead and took the strawberry batch out of the fridge and let it ferment for a few more days. It was still too sweet for my tastes after only one day of fermentation. Just put them back in last night, and will have another taste test later today! Thanks for the replies, Paul :)

    I have also seen a vid using cream of tartar added to a wart and left to steep outside to ferment for 4hrs, have you ever heard of this method and how does the cream of tartar work to help fermentation? would this give the Ginger beer a different taste? as I have seen some comments saying you cannot get away from the possible rotten smell/ taste caused by the lacto ferment...btw I started my bug today 😌

    I have never heard of cream of tartar used in the wort--I have never done this and my sodas always ferment great. The funny taste/smell is only very subtle and the more acid you use in a wort, the less of that taste there is. That's why the lemon lime soda turns out so well, because there is lots of lemon and lime juice and it turns out nice and tangy. I am happy you started a ginger bug...let me know how it goes! :)

    +I Cook And Paint started my ginger bug 6 days ago and today it's bubbly and smells sweet 😊..... On the 1st to 3rd day the bubbles were a good amount, tiny and were mostly at the side of the bug, then the 4th and 5th day the bubbles were mostly all gone and I was worried some thing went wrong but on the 5th day it got bubbly again.... When it was kinda flat I left it fermenting next to a bottle of kefir I had for a good few hrs and its when I checked it in the evening that the bubbles were back all over this time instead of just to the side, so I don't know if leaving it next to the kefir did something, I stir it once in the evening and give it sugar and ginger with another stir at night ......should I use it now to make the wort drink, Or leave until the eight day?

    They are very difficult to open after the soda carbonates. If swing top bottles are not available, then use recycled plastic bottles :)

    I made this and it turned out great. I did end up using different bottles. I don't think I let it ferment long enough because I was too eager to try it, but still it was wonderful. Next I am going to try this with blackberries!

    Blackberry turned out very delicious, but blackberries are expensive around here. So, I just wanted to let you know I tried your wonderful recipe but substituted pineapple for the strawberries and it worked out great. Made the best tasting soda! Now I have 2 favorites, the strawberry and the pineapple. I wanted to thank you for this recipe and tell you I'm looking forward to any future video you might do on making cola!! I'm so glad this provides a way I can still enjoy soda without consuming high fructose corn syrup. Plus the soda is probiotic. An added benefit, in my opinion.

    @@Lady.Fern. 1 day on countertop - 0.2% alc by volume, 2 days - 1%, 3 days - 1.5%, 4days - 1.6% Should be fine either way, it's going to be extremely difficult to even get tipsy drinking this stuff. You can make it more alcoholic, but you'd have to ferment it for like 2-3 weeks :P

    No alcohol in this, only when it sits around too long, like for several days. It becomes less and less sweet, then eventually alcohol (but not the good kind).

    For water keifer i just add chopped Berries and sugar to my send ferment. It gets nice and fizzy. Wondering why the fruit here needs to be boiled with sugar as opposed to just putting it directly in the jar?

    That sounds great! The simmering is more to dissolve the sugar and extract only the juice without the need of a juicer.

    My ginger bug bottle is full up to top by filling every day one tea spoon of sugar, little water and ginger Can it should be use for long time or ginger in bottle should be thrown out as it was one month old in bug bottle

    If you are not using it for a long time you can put it in the fridge and forget about it. It will last for a few months without feeding. Whenever you use it, make sure some of the old stuff comes out so you can replace it with new, that way there won’t be too much build up.

    Yes you can, but add it slowly and do it over the sink-it might erupt like a volcano! It seems to get excited when you add sugar but you still can 😀

    I think this was also last. You can store is for a while for drinking. Fresh juice wontbe good after few days even in the fridge.

    If the drink is sweet, that means the bacteria hasn't eaten all the sugar, right? So, aside from the fact that this has some fermentation going on, how is it better than a regular sugar-filled soft drink? I'm not asking as a challenge - I genuinely want to try this - I am concerned about giving it to someone who is diabetic or has other dietary issues with sugar. Is is possible to make it using honey or some other non-refined sugar?

    Ginger bug sodas are sweet and should still be consumed in moderation, but unlike a regular soda these are lacto fermented and therefore contain beneficial probiotics. The ginger bug eats most of the sugar--up to 99% but it still tastes sweet. I don't recommend reducing the sugar in a recipe--I have tried it and it tastes horrible. Any form of sugar can be used but steer clear from (unpasteurized) honey--it has antibacterial properties and therefore kills the ginger bug. I hope this helps.

    NorthlandDWJ if you didn't refrigerate after a couple of days you would make strawberry wine because the yeast would turn the sugar into alcohol

    I Cook And Paint I will do. It is easy to make own ginger bug. But my first one a few weeks ago got mold on top. Last week my next trial. Now i know how easy ir is. Today i will start my own ginger ale. I look forward to it.

    Great! When you use the lemon or lime rind, don't bother grating it...just peel it and simmer it whole, it will save you all that straining time. Enjoy!

    Best thing I can do for straining is use a nut milk bag ........ only have to strain once, can squeeze out all the goodness, and are not using metals which the ferment does not like ............ thanks for the great recipes!!

    Stop feeding it and give it a chance to ferment. Could be high sugar content making it thick. Just let it be and it should be fine.

    I would try a small amount, maybe a quarter of a recipe in a small bottle and see if it works. Ginger Bug does not generally get along with chemical based beverages, but sometimes it works so it’s worth a shot :)

    The same amount you remove to add to the soda, so around 1/4 cup. Sometimes I don’t bother adding more water if there is already lots in the jar; as long as there is enough for the next soda :)

    I cannot get my sodas to carbonate. my ginger has little bubbles but when put in a juice nothing. the juice taste good but no bubbles...

    Sorry to hear...are you giving it enough time to ferment? Sometimes if it is cold in the room it can take up to 6 days for it to become bubbly. Keep it warm but away from direct light. Also, is there enough sugar in your juice? Always use 1/2 cup sugar to 1 litre of juice...it may sound like a lot but the ginger bug needs it to make the soda bubbly. The sugar ends up breaking down so it won't be that bad for you. Does this help? Keep me posted and good luck!

    @@fteambjj possibly could be done with some dried fruit, because they contain wild yeast on em, but you don't even have to do that, just take a lil bit of your ginger bug juice and mix some berries with it, add water and sugar, and feed it, and now you have a berry tasting bug, i made it yesterday and it's very active, probably going to use it as a starter for a berry soda :D

    In the United States legally no if you fellow the advice in the video of limiting the fermentation time and drinking it fairly quickly. Practically in the sense is there alcohol in the drink yes anything fermented with yeast will be alcoholic by its very nature.

    @@Itgyrl909 I put yeast in my ginger bug, which brought up the alcohol content high. I put yeast in it to try to bring dead gingerbug back to life. It wasn't bubbling no matter how much I fed it. Yest did bring it back alive and kicking. I only let my soda ferment for 3 days.

    Has anyone ever had their drink develop a white film across the surface? It looks like it's developing a SCOBY. Should I chunk it in the trash? Is it harmless? There is no color to it at all. It is becoming fizzy.

    My sodas always look like that...it means it worked, so don't throw it away! And don't be alarmed if it has a slightly sulfur (almost eggy?) taste to it underneath the strawberry flavour. Ginger bug sodas are almost like tonics (kombuchas)...and nearly all of them have this aftertaste. They may be an acquired taste. If you do not like the aftertaste, try my lemon lime soda recipe...it is the one soda that has none of this aftertaste at all.
