I always put the potatoes in cold water. That's the way both my grandmothers did it. That's the way their grandparents did it. My father too always started with cold water when boiling potatos.

Chopped mint leaves is delicioso too. I love potato salad... got tired of traditional one so i thought I'd spice it up a bit. Add lemon to mayo when garnishing with mint leaves. Ty chef. I will try this one.

The potato salad recipe handed down in my family uses waxy potatoes boiled and sliced, vinegar added while the potatoes are still hot, olive oil, chopped onion fried, crisp fried bacon chopped small, hard boiled egg chopped, salt and black pepper - it is delicious! No mayonaise !
