If it's stir fry or fried rice, your ingredients should be cut into bite-size. EVERYTHING IS IN BITE-SIZED: brocolli, fish, chicken, carrots, celery, ham, bacon, etc. Whatever your version calls for. But these dishes are nowhere near the visual of a fried rice.

I never thought about how crazy it was that the American MasterChef had so few Asian dish challenges given how big a part Asian food plays in the North American restaurant industry. You cannot mess up on a stir fry. I’ve been stir frying since 3rd grade. When you have to many ingredients going into a simple dish, you just murdered it completely. Actually very tricky challenge, which I think may not be fair to those that don't eat a lot of Asian food. To stir fry rice, one key is to use overnight rice that was put in the fridge which would allow reduced moisture. So, instead of cooking the rice like normal and then stir fry it in high heat (at the risk of burning the rice), it's probably more wise to keep the lid open when it's 70% percent cooked.
