Hey, ive filet’d a few stingrays before, and an easier way to do it is to just keep the wings on the body as you filet he meat off. It gives you quite a bit more traction and control over what’s going on. Treat the line where the filet ends and the main body begins as the backbone of a fish looked down from the top. You want to slice down until you hit the cartilage, depth naturally changes based on the size of the ray, then just slide your knife along the cartilage towards the tips of the wing. Hope my explanation makes sense! Happy hunting! God bless!

so i've always wanted to try stingray - i hear if you prepare it right, it tastes like scallops. but i've heard from some fisherman that rays essentially urinate through their skin and it will soak into the meat if you don't clean them quickly/properly. i'd hate to catch/kill/cook a ray just to find out the meat had spoiled. do you know if there's any truth to what i've heard or have any tips?

A friend shared about 10 lbs of stingray meat off of a huge stingray he caught while surf fishing off of the Texas Gulf coast (near Galveston). I was a little afraid of eating stingray but it turned out to be the best tasting meat I’ve ever had! I slathered it in mustered, tossed it in a bag of flour seasoned with salt and pepper. My entire family loved it. Thanks again for sharing your fishing 🎣 trips.

Too bad spotted eagle rays are protected by law, because they put up an incredible fight. Much like a big redfish. But protected for a.good.reason they are endangered and rare. If you accidently catch one, enjoy the fight and release it carefully. Beautiful creatures and they pull drag like a freight train.

I find it hard to believe you've never had stingray before! The Southern ray,, the one you had,, is the best tasting of all the edible rays! Many restaurants will punch donut holes of meat, bread them, deep fry them, and sell them as scallops. Other rays may be edible, also,, but, in my experience, are much more bloody throughout the meat, and because of that, I don't think they taste very good.

Yes, they can get very big! But the meat is still very good! I usually won't even keep them unless I can yield at least 15 lbs of meat. In other words, at least 24" across. I clean the meat, separate it into 2 lbs freezer bags, and put them in the freezer. So, from one ray, I can usually get 8 meals. But I don't stop there,, oh no! The skin, dried out, and cured, has a non-slip grip advantage,, good for wrapping knife handles, hammer handles, fishing rod butts, etc...

When I was stationed in San Diego, a Polynesian gentleman told me that if I catch a ray or skate to cut the wings off, wrap in foil with salt pepper and lemon with the skin on and throw it directly on the coals. Skin strips off and the meat slips from the cartilage. Similar to trout in the cooking process.
