Great recipe! The sugar you've used is dark muscovado, you can tell its this as it becomes lumpy when you store it. Demerara is free flowing much like regular granulated sugar 🙂

Nice try But the key point to perfect sticky date pudding is to make caramel sauce just before you think the cake needs 2-3 more mins in oven so meanwhile you make caramel sauce so when you take the moulds out you drip caramel ASAP because it needs to get soaked inside. Otherwise sauce will become think and difficult to get inside the cake & it would just be a cake with thick sauce over it.

Buddy, Egg is the essence of dessert like Cake or pudding, it makes it soft and fluffy. You can add yogurt instead of eggs but it wouldn't give you the same result as eggs.

Baking powder is added to the mixture at the end. Also caramel sauce is made from white sugar, I think when we use brown sugar it's called butterscotch sauce. When the sugar is brown, we add the butter first not the sugar 1st in the pan. But I guess the dish is tasty.
