Uncle Chris, I just made your whole jerk chicken for my bishop and his family and they absolutely loved it. Their 3 year old called the chicken “ice cream”. The wife sent me a video of their son cleaning the meat of the bone. It’s so cute!!Thank you for sharing your talent to with the world so we can also bless other. (I’m mad because I forgot to take a picture and send it to you). I love this video too. I’ll make for the missionaries when they come for dinner.

Made this exactly as directed, except I did not have pimento peppers. I added in some fresh ground chili paste (Sambal Oelek). I boiled it down the second time, to a thick rich gravy. Oh my goodness, it was amazing. Thank you!

It’s so crazy you posted this, lol!!! I woke up this morning and said I was going to make chicken stew. Same thing but with chicken. I tried something new (to me at least) last time I made it and smoked the meat before adding it in. Wow it was a wonderful addition. Not doing it each time because I love my traditional island flavors but once in a while that smoked flavor element is good.
