    Thanks for the explanation Ms Debbie, this has cleared up a lot! I do like both versions of chicken stew, but the one without the browning is very much like the old fashioned way we make it in Haiti. Only difference is a few different spices - we use cloves instead of the pimento + bullion cubes & the other herbs. We also mashed up the herbs in a motar & pestle & rub on the chicken.

    Hello Debbie, I am new to the channel and I love it!! There is a Stew Chicken but it is a Southern originated dish which is correctly pronounced Stewed Chicken! It is made with some similarities but different from Brown Stew Chicken. I think some people just say Stew Chicken for both dishes though they are different. My grandmother, Mom and Aunts from North Carolina used to make this dish when I was younger. It was mainly cooked the way you would cook any stew, slow and long. Yes they are two different dishes from 2 different cultures.

    As a Grenada we put a little oil and sugar in the pot when the sugar gets dark put season chicken in the put with ketchup that gives it a brown color

    Same for Trinis. It's the only way we stew. Burn yah sugar, and then add the chicken. Not sweet or bitter but perfect

    I’ve been looking for your videos everywhere...I forgot to like your curry chicken video...after I watched it and I watched other videos...you were about the only one that explained that you have to cook the curry a bit before adding it to the chicken to prevent the bitter aftertaste...I made it your way and it was delicious...so glad I found your channel

Dem a put browning ar gravy powder/granules eena it wid dis whole heap a Irish an carrot. No, anuh curry dat, is goat stew. Carrot an tomato give a sweety tainty flavour, and I for one don't want to see it een deh. Don't get me wrong, it might will taste nice, but fi gaad sakes nuh call it authentic jam curry. A good curry can stand alone if uno what you doing. Don't need anything but a good curry flavour. Sick of dese shops here cheating and I'm not even Jamaican lol.
