    Hello, Thank you for watching this video. The dough can rest in the coldest part of the fridge (between 3-6 degrees celsius) for 12-48 hours. Resting it longer can ruin its texture and higher temperatures might cause the dough to overproof.

    The quality of the flour affects how much water you need to add. Use flour with more than 11% protein. but if you don't have high-protein flour, use less water and add some whole wheat flour to get the texture you want. Hope this helps.
