    I can't think of too many "stick burning" BBQ restaurants in WI. Aaron Patin closed Iron Grate BBQ in Milwaukee in 2022. It seems like he was just fried from the long hours. Loved that place. Big Guys BBQ in Hudson is an offset based BBQ joint - but also has a major "sports bar pub food" component. So he's not strictly BBQ, like some of the places you'll find in the south. Speed Queen in Milwaukee has a giant charcoal pit, but not sure if it's gas operated. So many places in Wisconsin won't show you how they cook their Q - won't advertise it like you see in the south. Smoke Shack in another one. They're woodfired - but not sure if it's gas or electric operated. I know there is a good number of people in WI with backyard stick and coal burners, but so many people are jumping on to the pellet grills for convenience. Which is cool. I just took my old electric smoker to the recycle yard, and bought a TMG Pits Dumpster for some good Texas Hill Country direct heat BBQ. ...Going old school. It's hard to find good Q in Wisconsin, so you have to make it yourself. :) Hoping to get up to the GB area this summer, and stop in for Steel Belly Q - get that food truck going. :)
