Steamed Pudding (Samoan Puligi) and Custard Recipe
Thanks for watching my video, hope you enjoy one of my childhood favourite desserts - steamed pudding. This can be made in a pot or the oven, directions are in recipe below. 😊
Steamed Pudding
Ingredients:
3 1/2 cups all-purpose flour
2 tsp baking soda
1 1/2 tsp ground cinnamon
1 tsp ground nutmeg
1/2 tsp ground cloves
1/4 tsp salt
2 sticks butter (1 cup butter)
3 large eggs
1 tsp vanilla extract
“Burnt Sugar” mix:
1 cup white sugar
1 cup water
1 can evaporated milk
1. Set aside parchment paper and bakers twine (string). Or if baking in oven, grease a Bundt pan well with butter or oil spray and preheat oven to 350F.
2. Cook sugar in medium pot over high heat, stirring continuously until it turns dark caramel brown.
3. Carefully add water slowly, (be careful of your hands, it may splash out a little) then whisk in evaporated milk. Stir, then set aside.
4. In a medium bowl, whisk together the flour, baking soda, 3 spices and salt.
5. In a large bowl, cream together the butter and 1 1/4 cup white sugar. Add eggs and vanilla extract, scrape sides down.
Add the flour mixture and burnt sugar mixture alternating 1/3 at a time until all mixtures are incorporated and mixed in well, like a smooth pancake consistency.
6. (IF STEAMING IN POT KEEP FOLLOWING INSTRUCTIONS, IF BAKING IN OVEN SKIP TO NUMBER 8).
Place two long pieces of parchment paper in a
large mixing bowl with paper hanging over the sides. Place them in a criss cross pattern, one over the other. Pour batter inside and tie top up with string. Tie around 2-3 times with a bow so easy to open when cooked. (If using Bundt pan, pour batter in pan and place tinfoil on top, shipping it a bit like a cone so there is room for pudding to rise. Secure tin foil tightly around pan & place in oven for 1 hour and 15 mins).
7. Place large steaming pot on stove with about 6 cups water, place parchment package in pot and turn stove on high. Steam for 30 mins then add 6 more cups water and steam for 30 mins. Take pudding out of pot and press to feel if bounces back slightly, if it’s about jiggly, put back in for 5 mins at a time until it’s ready.
8. (If baking in oven) POUR PUDDING MIX INTO GREASED BUNDT PAN. COVER TIGHTLY WITH FOIL AND BAKE FOR 1 - 1 HOUR 15 MINUTES.
Custard:
1 box vanilla heat & serve Jell-o
4 cups milk
Mix two ingredients on med-high heat over stove till thickens and is pourable consistency.
(Or if you live in NZ or Aussie, use Edmonds custard powder recipe 😊).

this is the best puligi recipe ive seen on youtube, detailed instructions. the only thing i do different is i add a can of coconut cream (Kara...lol) instead of evaporated milk. thankyou for the video.

Thank you so much and Kara coconut cream is my favourite! Not just because of the name lol. Yes, replacing evaporated milk with coconut cream is delicious, I think you can’t go wrong addi g coconut cream to anything lol

Thank you for this video Kara, my little grand daughter is part Samoan, I made your recipe with her today ...was spongy soft like yours, spiced just right and melt in your mouth from the first bite. The custard took your recipe to another level :) , it made us want to Siva :).

Love this recipe! So straightforward and simple steps to achieve such a delightful dessert. I do want to say that when I baked mine in a water bath, I baked it for 1hr 45mins to 2hrs because when I baked it for an hour the first time, I had a raw middle, and even though I put it back in for another hour I was able to save some parts of the puligi, but not all. Anyways, thank you so much for sharing your recipe, it’s definitely a heart warming meal in my family on Sunday evenings after a big toonai during quarantine ☺️🙏

By stirring from the beginning you are stopping the sugar from caramelising. Only needs to be stirred once it's on it's way. Cuts down on cooking time.
Excellent recipe. Have never managed to make steamed pudding successfully. But your recipe has encouraged me to give it another go. Thanks for sharing.

Thank you! I live in the States so it’s hard to find custard but I can find vanilla cook & serve jello here in almost every grocery store and it’s the best substitute for custard😁

I straight use custard No need for Jelly it's why it's too thick It's optional preferential..
I was about to say why didn’t you just put in a pan lol 😂 just seems like too much the steamer style. But thank you for the recipe ❤
