@@TXDogg83 It is definitely not supposed to be a paste. It should be diced in small cubes. Maybe about the size of a pea or a little smaller then serve it with the capers, onion etc....on the side so people can add it as they go. I make tartare alot and I suppose it can be made different in different parts of the world but just about every video I've ever seen shows it diced up. This you may as well just put ground beef on the plate and save all the trouble.

Ground beef tartare. Zero texture. I had this same dish at In N Out. Told the griller to just put the raw patty in a fry tray and mix the spread in it. Yeah I'm good.

Should have removed and replaced his gloves each time he finished touching the meat. Grabbing condiment bottles and especially the toast points was serious cross contamination. He probably doesn't even disinfect the chopping board after each use. Pretty risky dining.
