When you max out the trick meter on the right with normal tricks, you can do the uber tricks. Each character has a combination of 5 of the following: L (left trigger) + B R (right trigger) + B Z + B L + R + Z L + R + B L + Z + B R + Z + B It changes depending on who you play but this faq shows all tricks for gamecube: gamefaqs.gamespot.com/gamecube/529307-ssx-tricky/faqs/15570

You need to get gold medals in the world circuit for the race tracks. If you haven't unlocked a character, it tells you on the character select screen how many gold medals you need to get them. World circuit also unlocks all the tracks too, except pipedream which needs gold medals in showoff mode instead of race
