Love it . My mom would put hardboiled eggs on the spench. But this sounds good. A lot of your mommas food reminds me of my mom. Shes been gone a long time. I'm 20 years older than she was when she died. So it makes me happy to watch your mom cook. Does she make green beans and new potatoes?

My dad use to scramble mixed greens in eggs and we sure liked them. I believe he used turnip, mustards and collards. I know that was the greens we liked. I've even seen him scramble salmon and eggs they were also good. My oldest son is the same age yours is. Love ya'll

Yessss, also the next time I’m going to try it with chopped ham, and a little cheese. I washed my spinach and used zucchini, I didn’t have any mushrooms, don’t know if too much moisture was on the spinach or the zuks generated moisture, it was somewhat watery... didn’t look like Momma’s, anyway it was good and flavorful I used paper towels to absorb the moisture. Definitely will try it again 🥰

I do something similar. I call it my everything but the kitchen sink scramble. You can use almost any veggies, meat, cheese or egg whites or egg substitute you like.

Mama is just precious .
