@@earthangelmushrooms2118 Makes perfect sense, I would love to see your boiler in operation, it must be a beast. You are wrong though, give yourself a bit of credit, MIG welding is a relatively easy process but not that many can do it to a reasonable standard, trust me on that one.

@Earth Angel Mushrooms - TR do you think 25HP (!!!) is overkill? My math says this would eat something like 9 gallons of propane in an hour if running full bore the whole time. Thanks much for sharing!

Ihave a bubbas barrel, the larger of the two. I get 700 ten LB bags into that for each pasteurization. It takes 16 hours to cook, , and I load them hot into bins so no bacteria get in. Break open the bins in the clean air working space. If you smash the bags enough, those spaces should hold more than 1k bags, imo.

I was giving this a little thought while driving, and something to consider is how the actual thickness of the steel is going to be changing as it oxidizes. It normally wouldn't be an issue, but you're going to have thousands of pounds loaded on to those racks. I don't know how those steel containers that you said you used to sterilize or steam things in are usually weight loaded, or how thick they originally were. These are just some considerations to have, because it could end up being a fail case. If you got some nice heavy gauged steel for those racks, it probably won't be an issue.
