SPAGHETTI ALLA CHITARRA 🍝🌿 with roasted tomatoes and stracciatella

This is probably the most beautiful pasta you'll see today! Truly pasta perfection! 🍝🌿👇RECIPE👇 ‪@ManuCookandRock‬
INGREDIENTS:
• For the spaghetti:
3 eggs
10.5 oz (300g) flour
Pinch of salt
• For the roasted tomatoes:
7 oz (200g) datterini tomatoes
3.5 oz (100g) cherry tomatoes
5.3 oz (150g) San Marzano tomatoes
Olive oil
Salt
Black pepper
Fresh basil
3.5 oz (100g) Stracciatella cheese
PROCEDURE:
Mix all the ingredients until you obtain a smooth dough. Let it rest for at least one hour. Afterward, roll it out with a rolling pin to about 0.4 inches (1 cm) thick and use a "chitarra" to get the spaghetti. If you don't have a "chitarra", you can cut them with a knife, but it won't be the same.
Use the tomatoes you like most; I had San Marzano, cherry, and datterini tomatoes at home. Season them with olive oil, salt, and black pepper. Add fresh basil and roast them in a convection oven at 430°F (220°C) for 20 minutes. Once they are nicely roasted, pass them through a vegetable mill to concentrate their flavor.
Boil the spaghetti in slightly salted boiling water for 5 minutes, then toss them in a pan with the sauce and serve.
To add a touch of indulgence, crumble some Stracciatella cheese on top and garnish with a few basil leaves.
