Spaceship Restaurant Vespertine in L.A. Serves Out-of-This-World Food

The most revolutionary restaurant in L.A. right now is Chef Jordan Kahn’s Vespertine. Vespertine is so much more than a meal. It’s an architectural experience that incorporates the whole “Waffle” building. Diners start outside in the garden, continue up onto the rooftop, greet the chef in the kitchen, and, finally, take a seat in the dining room. To dine at Vespertine is to be transported to another world. Flowers, succulents, seaweed, and space goo are just a selection of offerings you might find on the menu. The dishes look out of this world, but they are delicious. It’s a polarizing restaurant that had mixed reviews when it first opened, but the late L.A. Times food critic, Jonathan Gold, named it the number one restaurant in Los Angeles, and the Michelin Guide awarded the restaurant two stars in 2019. Vespertine is game-changing and should be on the international map.

    Thanks for your kind words. Funny you should say that about this video. The footage from Vespertine is actually a year and a half old, so I feel we are past this quality already in our newer videos from Copenhagen. We learn something new every time we make another video. :)

Do you think there is adding value for the food? a lot of fine dining restaurants choose certain colours, it's interesting to see that the news ones focus on dark colours, I'd love to hear your take on that

    At Vespertine, the ceramic dishes are as much a part of the dining experience as the food. They work with local artists to create unique "vessels" to add to the eating experience and help with dramatic presentations. We think this style is a perfect fit for the restaurant and really fun to eat from, too. One dish is served out of a "tire" and one is like a black hole where you can't see the food inside - it definitely enhances the entire experience!

    The origins of pad thai are said to trace back to sometime in the 1940s in thailand, and emerged from a concerted effort pushed by the thai gov to create a new " thai" noodle dish that could appeal to foreign audiences. It was a success. In 1836 Bernaise sauce was invented by a inspired French chef and almost 200 years it is still enjoyed. More than a 1000 years ago some chinese person realized that fermented soya beans and salt resulted in an umami rich liquor that to this day is still utilized. These dishes, " ingredients" or however you"d like to call them have all had lasting power. The pursuit of innovation is a worthy and important one, but sometimes i cant help but think that (some) chefs get lost in a process whereby the plates are merely canvases for expressing their overinflated ego in this misguided attempt to pursue novelty purely for novelties sake. Amongst all the noise and fuss, their will be winners, but many, many more failures...... I cant help but think..despite all the investment, the press, the elusiveness of it all..vespertine is a distraction.....that theres nothing there, there? So how did you enjoy the meal,...taste-wise that is? I hope weve not come to the point where this question is haughtily dismissed with the retort..." yeah, but its really more about the "experiece"". What is food at the end of the day, if not health and taste. I love your vlog btw, and this is not a critique of yall watsoever

    Hey, thanks for your comment! You have some valid points, and I (Anders) was worried in advance that Vespertine would be more about the presentation/experience than the flavor. Kaitlin had been before and loved it, but I had heard from others who were not impressed. But I ended up being blown away by the overall experience here, including the flavor of the dishes. There were a few, maybe two, where flavor/texture seemed to have been sacrificed for presentation, but other than that, it was great.

    Not really dude, do you need to be rich to visit another country? Do you need to be rich to go to a music festival? No, just save some money and go for it if you really curious about food. Everyone with a stable job can eat in a Michelin star restaurant at least once or twice a year. Of course if you not into gastronomy just don't go.
