    Sourdough flaky biscuits 350 g - (2.8 cups)flour (all purpose flour) 1 teaspoon salt 1/2 baking soda 1 1/4 teaspoon baking powder Whole stick of cold butter cut in squares 315 grams (1.46 cups) sourdough starter (227 grams/cup) 1/2 cup cold milk Be safe, Be good, Be kind, Trust GOD.

    Amazing 🤩.. Been baking sourdough bread for a couple years & made this recipe. I did use a ripe mature leaven. The wifey thought it was the absolute best. Need to replicate come Christmas dinner. Thanks so very much.

    I made these though I only used 1/4 cup milk + 1 tbsp and they are scrumptious! I also translated your "1 stick of butter" to be 90 ml.

    Hello! I had two questions about the discard starter. When you used the discard for the recipe how long has it been since you fed it? Also, what feeding ratio do you use, is it 1:1:1 starter, flour, and water? I am asking because your discard looks very thick in the video, but my starter discard is 1:1:1 and very thin and liquid.

    Hello! For that recipe I fed my starter the night before. It is a 100% hydration, I use King Arthur AP flour to feed my starter, if yours is too thin even when it is at its peak try maybe a 75% hydration. You can also use discard, the sourdough starter only gives a deeper flavor to this recipe and a better structure to your biscuits it doesn’t help too much growth wise due to the very short proofing time, although it gives the dough a little boost, the baking powder will do that job.     Any thoughts on using a cheese grater to grate the frozen butter on for this recipe? I find if I chill the grater and the butter in the freezer for a few hours, it makes good chunks of butter.

    Yes, you can do that for sure and get great results too! I just wanted to make the recipe easier by omitting that step. But it is a great recommendation!, I’ve done it once in the past and it worked great for me. Thank you for watching!

    It was active but you can also use discard since you are using baking soda too

    What does the starter do in this recipe? There isn't much time for it to ferment the dough, so I wonder how it effects the biscuits.

    I like to print recipes after finding good ones. I believe yours is a very good one but there is first of all no option to print in your blog / website. Spent half an hour trying to figure out how to copy and print.. incredibly difficult to use. But thank you for the recipe.

    Looks really good but... Dough Whisk, Pastry Mixer, who has these??? I wonder why the second batch won't rise as much? 'Not turning the cutter because the biscuits won't rise', Why? I hope I get an answer. Enjoyed it and they look delicious.

    Sam Nooshin if you don’t have a dough whisk you can use a wooden spoon or silicone spatula and a fork instead of a pastry mixer. The second batch won’t rise as much because it is made from the scraps of the first batch and the dough gets more compressed and put together. If you twist the cutter you can seal the layers of butter and that can prevent your biscuits to rise properly and the flakiness of the buttered layers. Thank you for watching

    How much baking powder? Your video calls for 1 1/4 tsp but your recipe on your website calls for 1 Tablespoon.
