The cornflour used for making soups and any chinese food are a little different than what we usually call makki da atta.. Aap departmental store ya online store se weikfield ya kisi anya company ka cornflour use kariye. Taste mein koi difference nahi ayega. These only adds a different texture without altering the taste. Hope this helps. :)

What flame to cook the mushrooms in? Low heat or medium heat

I would say if you fry a little bit the flour with butter will test more flavor

Can use canned mushroom?
