You're most welcome, Maureen. Yes, I usually use parchment paper or foil , but this only prevents overbrowning. All cakes brown on the top in conventional ovens. If you want a cake to be more whitish on top, you'll have to bake it on the stove top where the heat comes only from below.

@@maureensamson4863 , you're welcome. You can bake with just the lower element - that's how baking takes place in the old box kind, non-electric ovens kept directly on the gas stove, or while baking in a kadai on the stove top.

Hi Jocyleen! Thanks for getting in touch. The only reason I can think of is that your batter could have been too thick. It has to be thin enough to spread by itself very easily. Was your batter thin enough? Only you could know this. Another thing that could have happened is that you could have added too much baking powder and baking soda and the cake rose too much. This cake doesn't rise too much and get cracks on top. If that happens, you won't get good zebra stripes. This is not a difficult cake to make at all but you have to follow all the steps strictly. Hope this helps.

@@jocyleenfernandes578 , it's important to get the consistency of the batter right for this recipe. Your maida could have been too compact and so you could have measured out more maida than needed. Anyway, even if your measurements turn out to be different, you have to adjust the consistency by adding milk to make the consistency thinner, or a little more flour if the batter is too thin. If you adjust the batter consistency properly, the cake will turn out right the next time. All the best!

Yes. In place of maida, you would have to use other flours like almond flour, nachni flour, or a good mix of gluten-free flours. I don't have a good recipe as yet for this, but as soon as I have one, I'll post a gluten-free cake video.

@@jocyleenfernandes578 , follow my instructions and ingredient proportions correctly, and the cake will be nice and soft and spongy. The cake batter has to have a medium flowing consistency and not be too runny or thin. That is, it should naturally spread out when you pour a spoonful into the pan.
