@@cruisinforaboozin noni haven't but I should! You could replace the sugar with monk fruit sugar which is a sugar replacer but you don't have to make it with sugar though 🫚🥤

A recipe like this came with a ginger grater I bought a couple weeks ago. It called for fresh grated gingee, sugar, lemon juice and 1/8 tsp of yeast, let it sit for 2 days and it turned out delicious! I don't like to waste anything either so I added the ginger pulp and a sprinkle of salt to a glass of filtered water and froze it into ice cubes that I now add to ice water to give it good flavor. The bits don't bother me because I drink it through a large straw so they just slide down without being unpleasant in the mouth.
