I am planning on smoking select Brisket for practice. Primarily the trim, getting that right is very important to achieving a great Brisket.

Haha How am I just now seeing this? I'm pretty sure you're you're talking about me! Thanks for breaking this down! I actually have another select brisket in my freezer still. (stocked up when they were on sale) I think I'm going to split it and cook it this weekend.

I do have an injector, plenty of tallow, and broth. No Kosmos though.

Haha, thanks. Working on it. I have a friend that lives by you, he’s going to talk to the butcher there and see they can start getting special orders in for those who request it. Might want to give it a try.

@@thegalleryBBQ he’s talking to the butchers and asking, “hey can you order me a $3.99 a lb brisket like I see all over the country at Costco. He’s asking in the next two weeks, will keep you posted with what they do.
