Smoked Meatloaf | The BEST Stuffed Meatloaf I've Ever Made

In today's video we are talking about how to smoke meatloaf, but not just any smoked meatloaf! We are talking about the BEST stuffed meatloaf recipe I've ever made! This smoked stuffed meatloaf is so easy to make and is stuffed with cheese and spinach! I promise you this smoked cheese stuffed meatloaf is far from dry and the secret to that is the little bit of ground pork added to the beef when making the meatloaf! Of course it is very important to monitor the internal temperature when smoking meatloaf so it stays nice and juicy and definitely doesn't dry out. I have the complete recipe for this smoked stuff meatloaf down below, so go ahead and give it a try!
Smoked BBQ Stuffed Meatloaf
| Ingredients |
-2 Pounds Ground Beef
-3/4 Pound Pork Sausage
-1 Cup Milk
-1 Cup Breadcrumbs
-4 Cloves of Garlic (diced)
-1 Onion (diced)
-Sliced Pepper Jack Cheese
-Spinach (sautéed)
-2 Eggs (Beaten)
-Tailgater's BBQ Party Rub
-Elk Creek Hog Knuckle BBQ Rub
-BBQ Sauce of your choice
| Instructions |
Prep:
1. In a large bowl, mix ground beef, pork, garlic, and onions until evenly incorporated.
2. Once the pork, beef, garlic, and onions are mixed thoroughly, pour in milk, breadcrumbs, milk, and eggs and mix thoroughly until incorporated and slightly tacky.
3. Season the meat to desired taste and mix thoroughly.
4. In a loaf pan lined with plastic wrap, put down a layer of meat mixture halfway up the loaf pan and then lay down the slices of cheese and spinach.
5. Cover the cheese and spinach with the remainder of the meat mixture being sure to pack it tight in a loaf pan.
6. Once packed tightly in the loaf pan, flip the loaf pan onto a cooking rack and remove plastic wrap.
7. Apply a layer of the all-purpose rub to the outside of the loaf followed by a layer of BBQ seasoning.
| Cooking |
1. Set the smoker to 300º F.
2. Once the smoker is to temp put the meatloaf on the smoker.
3. Smoke the meatloaf can until it reaches an internal temperature of 160º F in the center of the loaf (Approximately 1.5-2 hours).
4. Once the loaf reaches 160º F, apply a light glaze of sauce to the loaf and allow to cook until it reaches an internal temperature of 165º in the center of the loaf.
5. Once the meatloaf has reached 165º F in the center of the loaf, remove from smoker and allow to rest for 10-15 minutes.
6. After the meatloaf has rested for 10-15 minutes, slice, eat and enjoy!!!

THANK YOU! We are 2 for 2 on having delicious outcomes from your videos. Due to “materials on hand” I had to tweak your recipe a bit and made an Italian version of this meatloaf. Now one might ask “Italian flavors…on a SMOKER?!?” And I’m here to tell you it was a resounding YES! We substituted mozzarella cheese and basil in the filling, and used Italian Spice Mix and smoked cracked pepper and salt for the seasonings. When finishing it up, we basted it with a mixture of 50/50 marinara sauce combined with fresh basil pesto sauce. It 👏🏼 was 👏🏼 DIVINE 👏🏼👏🏼👏🏼! (Beautiful smoke ring too, by the way) We’re already talking about additional versions we can make by adding things to your basic meatloaf recipe - jalapeños and cheddar or colby jack cheese, for instance. Also, we’re going to be trying out a bunch more of your recipes and pick a favorite for Christmas dinner. Who knows - it might just be a Christmas meatloaf! It was that good. Thanks for sharing your wisdom here. And maybe put out a cookbook - we’d buy it!

You mean you don't grill or smoke in the winter? It's great...1 smoker grill, 2 glasses wine, maybe 3 depending on temp, 2 hats, 3 coats, 2 pants, 2 pair socks and insulated boots. Cook and watch the Christmas trees grow. Can't beat it!

Hey man, this was just a mixture of some leftover bottles I had in my fridge. Mix and match
I’m Back !. Making one with jalapeño, broccoli , velveta wrapped in bread!. Flatten out ground meat in a cookie tray, cover with stuffing & bread wrapped velveta , then roll up like a cinnamon roll, place in Dutch oven , cook

Looks really good, I will definitely give this a try sometime. But, did I see around 7 disposable gloves being used (and therefore thrown away)? Maybe makes video easier but I certainly hope that isn't a regular occurrence as that is a huge amount of waste that simple soap & water in washing your hands can solve. This definitely is a common thing in watching bbq/smoker videos on KZread these days (certainly not just this channel, but a lot of different ones I've noticed). Thanks for sharing your recipes.

If it doesn’t look like too much onion, You need more onion A rule I use for a lot of meals

Why would I edit the time? The time listed is how long mine took. Obviously there are variables that could effect yours. Also, that seems extremely long, I’d double check your thermometer.
