We mainly work with European and American models as we find them to be more reliable and know how they operate. I believe that the model you have is a Chinese model. There is usually 2 modes these machines can run in, freeze (which usually runs on density) or the overnight/chill (which is usually is controlled by temperature). Generally when in freeze mode it utilises the density settings, which is thickness (rather than temperature). The temperature only takes into effect when in chill mode. So depending on which model - I believe the Longo and co Machine is a Chinese made My Granita style Slushie Machine, the control panel may vary. If it has a digital display, the higher the number on the control panel means that the mix will be thicker in slush mode. Generally this is on a scale of 1-7, the optimal settings should be set to around 2.
