Where I live they catch salmon, trout and arctic charr when they are ready to spawn, they take the eggs from the female and milk from the male fish. The fish is then put back into the river. When the eggs hatch in secure tanks they feed them until they are at a certain size then released into the same river. This is done to help the fish population in river and lakes. Not sure that’s the case here but the lack of touching the fish they are probably putting the fish back into the river.
