Green papaya (papita) food professor main grind kar kay ice cube tray main freeze kar lain. 1 cube for every pound of qeema (1/2 kg) as a meat tenderizer. Works for these kebabs and also koftay or any other kabab.

Assalam o alaikum. I like your recipes. It's just a quick tip to tenderise the meat while marinating. You can substitute the papaya with kiwi fruit or pineapple. Although they are sweet fruits but the half ripen ones do not effect the taste as they are not sweet. Just grind the fruit of your choice and add to the marination. My tried and tested one is kiwi as it is easy to find kiwis in U.K and Europe. Thanks for the lovely recipe.
