As i can understand, in Turkey attitude towards boars is same like that towards rats, mice and cockroaches. This is why they are killed and not eaten. European also would rather get sick because of protein deficiency than eat rodents and insects:)

For Muslims, eating pork is forbidden. That's why people don't eat pork. Since the meat of the shot animal is not eaten, standard Turkish dishes are sometimes eaten.
