In my opinion, the better Chicken Rice stalls in Singapore are those that offers "Ginger Sauce" to go alongside the chilli sauce and the rest of the dish. Chicken rice may seem like a one dimensional dish, but the technique and flavours involved makes it so much more complex. Thank you for shedding light on Singapore local delights! Cheers.

Tong Fong Fatt has ginger sauce but for some reason it wasn’t served to the host.

That ginger, garlic and shallot sauce is just incredibly adictive. It just goes with anything. Absolutely fantastic in asian soups as a condiment.

Chili sauce + Ginger is a must!
You can tell when Andy is HAPPY when eating HE SMILE -HIS BODY LIGHTS UP and it's a wonderful thing to watch 😊 Babe is a lucky woman
Remember having this for the first time in Singapore. When it came out on a plastic plate looking so plain I wasn’t expecting much…it’s still one of the best things I’ve ever eaten.

When I first had this dish in Singapore it blew me away. How can Chicken and rice be so delicious.

Great video Andy. I was in Singapore about 12 years ago and fell in love with the chicken rice. I tried both the traditional and roasted, and to be honest I couldn’t decide which I liked better! Both were amazing, I think the rice and getting the sauce right is as key as getting that chicken right. It’s a package deal haha. Can’t wait to see your version

I love the base chicken rice like how you described for Wee Nam Kee. Good grain separation, a bit lighter in texture, not too sticky or clumpy.

Nice one Chef Andy, I am from the Philippines, I’ve been here in Singapore for 15yrs and Chicken rice became my comfort food, you absolutely hit all the points when it comes to a perfect chicken rice, in fact the ones that earned Michelin starred are overrated, those prepared by uncles and unties in other hawker centers are far better with a perfect ginger and fresh chilli sauce and of course the fragrant rice cooked in coconut cream (gata) can’t wait to see your version of it.
Just a point to note about Singaporeans telling you which chicken rice is “the BEST” - There’s no BEST CHICKEN rice stall. There’s only YOUR FAVOURITE chicken rice stall.
chicken rice is one of the best foods in the world. it's surprisingly easy to make, to, and I agree -- the broth is so refreshing and an important side. sometimes I like a bit of winter melon in it (when it's in season), but otherwise just cilantro, salt and white pepper are great in the already ginger-y, green onion-y broth. garlicky/gingery jasmine rice (with shallots and pandan if you have them) is fantastic, a side of cucumber and tomato, sweet thick soy, fresh chili sauce and then of course the perfectly poached, slightly cooled chicken with gelatinous skin is one of my favorite meals to make.

@@rEmIxicy66 other than food, what success does your country have? Is it why Malaysians kept on flocking to Singapore for work or concerts or events like F1 etc? Singapore was kicked out by Malaysia and so far, Singapore has been progressing rapidly, way better than Malaysia. That's why it's 3:1 now. Maybe 4:1 in the future.

Surprisingly, a really good and consistent Chicken Rice is at the Kopitiam stalls, any stalls in fact. I've been to many and they somehow have been very good, while although not the absolute best out there but still consistent enough to eat there time and again.
The ‘secret’ to having individual grains of the rice distinctly…is mixing old and new rice. Old rice being aged rice >1 year. So the restaurants will mix 50:50 of new and old rice.

Tong Fong Fatt is my favourite chain of chicken rice hawker in Singapore and I will eat it every time I see it. Soy sauce dressing for chicken is the best I ever had in Singapore. Meat is moist with lots of jelly under the skin. I was screaming for you to try Tong Fong Fatt when you sampled the second stall at Maxwell food centre. Great video Andy.

I totally agree with this comment.. TONG FONG FATT may be good but it's certainly not the best. On top of that it's a franchised chain. But I love the content...!!

my mom's been cooking chicken rice her whole life. but the singaporeans, man they get it right.
Hainan Chicken Rice is one of my top 5 favorite foods and one of the best chicken dishes.

I love Maxwell. But unfortunately, I came a bit too late so the rush started. Lots of reserved tables, in the end a group of Pinay girls offered me to sit with them so I could have my Hainanese chicken rice. One of them laughed and said that she understood my desperation. I absolutely loved Singapore. Such a great place for multi-asian kitchens. Japanese, Korean, Chinese, Malay, South Indian food... all great. But the highlight of the trip was definitely Hainanese Chicken rice, Roast duck, Din tai fung and items from the Nasi Kandar centres.
I'm so glad you did this, I'm heading home via SG for 4 days to try and do the same and trying to add congee to it as well.
I am so impressed with a westerner taking a genuine interest in Asian cuisine. Wel done.

In Batam, Indonesia, which is very closed to Singapore that's why so many local vendors are selling Hainanese Chicken Rice here, mostly they are selling the roasted one instead of the original one. Hainanese Chicken Rice is my very comfort food since I was a kid.
I love those chickemn rice that serve a bowl of peanut and lotus soup.
This is a recipe I have been waiting for!

People will complain about everything. As long as you’re cooking the original dish to the best of your ability and not making something stupid like banh mi bowls. I think you’re good.
Couple of things you can do to elevate chicken rice, 1. Ginger sauce. its yellow in color and is a fantastic accompaniment slightly bitter, gingery sort of paste, complements the fatty chicken very well. some stalls have it in just grated with some salt, some have it mixed with scalding oil. i prefer having the regular grated version of this. 2. scallion/Spring onion and ginger. very similar to the above mentioned ginger sauce but has a different flavour profile, its like a step ahead. so grated ginger, plus a nice amount of salt, plus cut scallions/spring onions and then use really hot oil to pour over the mixture and stir. ( my favorite accompaniment.) 3. The citrus flavour you taste with the chilli is actually calamansi and in my opinion, it is essential to the flavour of the chilli and cannot be substituted.

Looks like a fantastic dish! Love that you are polishing and fine tuning your skills and recipes. I also appreciate that you explain what you like about consistency of the rice, for example, or the tast of the sauce.

Thank you for this video, Andy. Nicely done and quick to the point. Glad you enjoy SG local foods and wanna cook it. We love our chicken rice. There is another hainanese dish which you must try which is Hwa Heng Hainanese Beef noodles, located at the Bendemeer Market & Food Centre. Like Nam Kee, Hwa Heng also transcends 3 generations. Be prepared to stand in line for 50 minutes but it is So worth the wait.

You have the chinese: poached and/or roasted chicken rice. Malay: Penyet and/or crispy fried chicken rice. Try my sisters at Nurhidayah Food stall at Golden Mile food centre.😅

That thing about the rice being cooked in a way where the grind stay individual is a unicorn I’ve been chasing for a few years now. I think the secret (knowing nothing about this particular dish and only what I’ve learned cooking rice) is pressure and allowing the rice to finish off heat with the lid on. I sort of apply what I learned from making Mexican rice to other types and it has worked really well. Start on the heat, finish off the heat with the lid on.

Love these Andy! Yours looked pretty good. I’ll try it from your guide next week (did yours have that fatty layer on the surface? How was that achieved?). The soy/sesame oil dressing from one of the earlier ones sounds like a nice idea for a fresh rotisserie chicken. I like the sliced tomato on the side with one of them too. That last presentation with the two types of chicken looked fabulous! I’ll have to play with all the different rice recipes that you were served. .. saving this for further study. Thanks!

One of my favourite dishes out of the many fantastic dishes in Singapore ( 18 months working there in the mid ‘90s. Have made it myself a couple of times. Sounds boring but is utterly delicious.

As a S’porean travelling around many parts of Malaysia I’ve learnt to appreciate and enjoy the multitude of cooking styles from kampong to grand restaurants; then add in the ethnic mix, and we have food heaven👍👍😋😄
