SINGAPORE HAWKER FOOD | Seng Kee 119 Steamed Fish Head (成记驰名酱蒸松鱼头) | Chinatown Complex Food Centre

Steamed Song fish head is a Cantonese dish, a dish widely sold at Chinatown Complex Food Centre. Seng Kee is helmed by the second generation owner, Mr Chan, now in his 60s. Originally established as a chicken rice stall at Temple Street in the 1960s, Mr Chan's father switched to selling steamed fish head.
Having considered his customer's suggestion, Mr Chan was the first to come up with a 'hot sauce' recipe, a delightful sauce that tastes sweet, sour and spicy, poured over steamed fish head.
Another must-try is his silky braised tofu (红烧豆腐). Homemade deep fried tofu is stir-fried with prawns, mushrooms, cabbage and beans. The tofu, soft on the inside, literally melts in your mouth.
Mr Chan also whips up his other signature stir-fry (煮炒) dishes, including Kang Kong with Cuttlefish (鱿鱼蕹菜), Prawn Paste Deep Chicken Wings (虾酱鸡) and Pork Rib King (排骨王).

    I would love to try this dish as I love fish. I can tell Mr. Chan is a skilled Cantonese cook in technique and preparation. His ingredients are also super fresh. I heard about this dish from Greg's Big Eats channel (Gregory Leow) filmed a year ago. Greg said Mr. Chan developed his special hot sauce after a trip to Thailand 30 yrs ago. I can see where the inspiration came from. There is a Thai fish dish with tamarind sauce. A whole fish is fried, then topped with a sauce comprised of garlic, ginger, chili, tamarind sauce, shallots, soy and fish sauce, sugar, scallions and cilantro. Mr. Chan uses plum sauce instead of tamarind for sweet-sour taste and added fermented soy bean paste to give it a Cantonese flavor. Very nice creation. Also, nice of Mr. Chan to allow you to film his not-so-secret recipe now. lol. 😊💕👍

    @@HappyCat.CarlNeo I love steamed fish and Mr. Chan is generous to include fish head and collar, big portion size. I love Cantonese steamed fish with ginger-garlic-scallion soy sauce and also with mei choy.
