So what kind of maintenance should we be doing on the lids? MIneral oil like for cutting boards?

It's cedar so it doesn't really need anything. Bee wax would be good though
Why cedar wood? Can I use other wood? Or cedar is safe in the food?

I suppose you can, traditionally they use cedar because it is light and has anti bacterial qualities.
Why char the top of the lid at the end?
