I think from my understanding is that during mughal rule they used to kidnap women from nearby villages so the sikh community decided that they will rescue the women at 12pm as most of the guards would have been fallen asleep and it would easier to rescue those women I think

Sikhs used to attack Mughal convoys trafficking enslaved women to rescue them. Later through the course of time, people started using it as a joke that if a Sikh is agitated/energized, it must be 12'O clock.
