SIDE BY SIDE - $3,400 Lelit Bianca Vs. $7,900 La Marzocco GS3MP

Since the Lelit Bianca landed on my bar I have had a lot of requests to put it up against my daily driver, the La Marzocco GS3MP. On their face they don't appear to be all that different, but they also share a lot of similarities. So in today's video I put them head-to-head: spec sheet to spec sheet, and shot for shot.

I’m starting my new search into espresso machines! So happy to have found this channel. After working with my Izzo Alex Duetto II for about 10 years, it’s on the fritz due to an arc/sparking issue!! That being said, the GS3 was the machine I was interested in upgrading to in the future. This video however brings a new contender to the table. I’m still swayed to the GS3, but time will tell. Thank you for your input and content.

I have had the Bianca for almost three years now and it's been a trusty machine. I have however been getting the itch to upgrade, but it's really hard to justify it, because the coffee you can make with the Bianca is close to perfect already. I find myself disappointed by this video, because it's pushing me back from upgrading :) Thanks a lot for the comparison! Please make a video about flow profiling and how you use preinfusion etc with the machines.

Haha well there are some things you can get out of the GS3 the Bianca can’t, but it’s all about engineering like boiler sizes, and group differences. It definitely can be hard to justify the upgrade, but like I said in my review of the GS3, buying one isn’t a decision made in reason haha.

@@Sprometheus the difference might also be the temperature stability. The e61 is less stable than a saturated group. I hade the Rocket R58 before my GS3 MP, and I personally found the GS3 far superior to the e61 group, especially with light roast. But again, it is a matter of taste like you said.

GS3 all the way! Because it‘s so big you can really work around the machine, put something aside on the drip tray, have clear vision on the built in display and the overall cleaning experience is way better than on any other machine. But then you can get three Bianca v3 machines for the same price, at least here in Germany😅

It doesn't have some of the automatic Preinfusion and temperature surfing features of the Lelit V3 but has flawlessly scratched my espresso control itch and made my pre-work morning coffee time an absolute delight. Nice review. While in the past I enjoyed DIY on espresso machines (a La Cimbali), at my age I find this is no longer something I want to do if it requires any significant disassembly of internals. I like the ability to call a Marzocco-approved (and very competent) tech to work on my machine if needed. Only required this service once in the first two years, and the cost was covered completely by Marzocco. Customer service and the ability to acquire 1st rate advice from Marzocco has been invaluable. Also I find the temperature stability of the saturated group to be far superior to the E61 group - it's like a rock, whereas more care and technique is required with an E61 (in the age of PID control, easier but nonetheless). I would also say that while the GS3 can be classed as a top-of-the-line prosumer machine, it straddles the line and is also a small, 1-group fully capable commercial machine (with NSF certifications) suitable for low-volume use in restaurants and small coffee shops.

  • @RaimondoAlfano

I like the exposed group because it’s easily to bring the temp down when it gets too hot if it’s been running, without having to go through half a litre of specialty water in a cooling flush. The exposed group of e61 is an added bonus for me in that regard.

Another great video. It’s unlikely I’ll ever be in the market for a machine that is even as expensive as the Lelit so my opinion isn’t worth much, however I think that the Lelit is hard to go past here when you consider the value proposition. I still have a problem with people (you included) calling these machines ‘flow control’ machines. That simply isn’t true. The design of the Lelit means that it is closer to a flow control machine, but you’re still using a pressure reading to make adjustments. Flow and pressure are completely different- flow is a fixed (but adjustable) input variable whereas pressure is an output variable that results from the combination of a number of other variables including flow. I wish people would make that clearer. At the moment the DE1 is the only machine that allows you to control flow in real time during a shot with the data visible. It’s possible on a Breville BES920 with the flow control mod, but you either need to add another gauge or do some testing to establish set points on the existing gauge that show what the flow is.

  • @russojerry

When manipulating the flow paddles on both the GS3 and Bianca you are directly impacting the water debit, hence controlling the flow. In turn, that directly impacts the pressure in the grouphead. Just because a tablet isn't displaying real time data doesn't mean it's not happening.

I haven’t been able to try the Bianca, but being a new GS3MP owner (and former LM Mini owner), I have to say that you made the right decision to go with the GS3 MP. It is a bit better than the Mini in several ways: flow control (obviously), longer and cool touch steam wand, proper height from portafilter to drip tray for larger cups, easier accessibility to the inside of the machine (from the side), and a better overall profile for most kitchen countertops (a bit wider but shorter than the Mini). Do you still have your Mini?

I have a bianca since 2 years and agree that it’s a great machine, I would also like more resistance from the paddle, this is the only thing that feels a bit “cheap” when using it :) What I don’t get is the price of Bianca in the US… I bought mine here in Switzerland for 1700 CHF during Black Friday sale, but its standard price is around 2200 CHF here (with tax). Why is it so expensive in America? Here it’s a clear price/performance winner also against other E61 machines (which can be retrofitted with paddle for flow control), but in US I would consider other options (ECM, Profitec…) which don’t get that significant price jump there…

I just installed one in my coffee shop and found that while it was set at 95 Celsius in the pid but it was actually running at about 92 degrees after 40 minutes and pulling 10 shots. That could pretty well explain the difference in taste. The pid has an offset setting to correct this.

I’m gonna go with the argument that at a staggering 4000 dollar difference - for a reversion to mean on all time coffee tastiness -, you could spend it all on tons of coffee or even roasting. 60kg of the most expensive Brazilian black gold is around $2K. Not excluding the fact that you could probably go towards the rabbit hole of roasting with the Bullet roaster at $3.5K. There’s so much to explore with that kind of money in the coffee industry that I actually do not believe it is worthwhile to get the GSP instead of a Bianca.

Team GS3... But mostly because I have one but mine is the AV rather than the MP. It gets used on a coffee cart and probably the best thing about it is just how many coffees you can pump out with it. You get heaps of steam and plenty of temperature stability. having said that, I wouldn't recommend it to people. Just too darn expensive and you can make a really good espresso with far less money.

From someone with an older Bianca (I think V2): it's very easy to control, I would say it's very repeatable. The fact that the paddle only moves about 230 degrees, on the left being fully closed and on the right fully open, makes it very intuitive and simple to use.

My preference is… drumroll… the Mini. I like balancing time, yield, and temperature and leaving it at that. Adding flow (let alone temperature) profiling would give me too many options. I probably hated chem lab more than any other class. I’m just not an experimenter. Also, I tend to make small milk drinks, so I’m probably not seeking perfection like a straight espresso drinker. If I were tempted to upgrade, I could probably sell the Mini, buy the Lelit, and pocket some change. I’d have to save up some real cash for the GS3. The Lelit would feel like a downgrade, so I’d probably save up for the GS3. But if I’m to save up for any upgrade, it would be to get a large flat burr grinder over my conical Niche. Overall, both of these machines would be great for those who want profiling. Maybe the Decent would be the other consideration.

Studio is their much needed response to la spaziale s1 and variants because the mina is way too expensive. if not mistaken spaziale and dalla corte were once the same company before parting ways? at least a decade ago i almost bought a mina but dalla corte pressured the distributor to not sell it to me at a low price point so i got a spaziale s1 albeit no flow control but great shots. interesting is a 58mm option on the studio. i wonder if that option would make other portafilters fit like a LM one? i have seen modded studio with flow control and a vibe pump spaziale modded with flow control. being my first real espresso machine is a olympia cremina direct piston that is in effect flow control and i prefer the spaziale shots i will opt out of upgrading to a newer flow control machine. lelit and decent look like best bang for the buck and there is a vbm electronica that is nice also with flow control.
