Great video, thanks for sharing Matt! It's pretty common to see Shuns all chipped up, and it's great to see someone who's thinning out behind the primary bevel as a result of that much stock removal. I would also like to see & hear more on your thoughts and processes regarding the thinning and subsequent polish to restore the knife afterwards.

I love watching your videos. I’ve learned a lot from your wet stone how to’s. I do think they could be dramatically improved with one change. Your camera angles. They should be pushed in a little and on the side where your arm doesn’t cover the knife as much. As well as an overhead angle where we can see the blade contacting the belt sander. I hate giving unsolicited advice but I feel like this would greatly benefit your channel.

Thanks! I completely agree with you. I also should exist better, do better audio and lighting, etc. The funny thing is, I actually already have the equipment and knowledge to do that, I just tend to pull out my phone and prop it up against something at the last minute when I see a knife I’d like to show vs. planning ahead. 😬 I definitely should do better in that department.
What is the curved thing on your platen when you are thinning the knife?

It’s a convex platen attachment I made. Essentially it makes the platen have a profile like one of the giant Japanese wheels would have.

Matt, what your grit progression on the belt for thinning and giving it a nice finish on the blade?

Up to 400 grit and then buffed.

I'm not an authority on Shun, or looked into it further, but I had heard in passing that they have since changed their formula or steel process?
