Shrimp Dumplings

Shrimp dumplings ingredients:
Making 25-30 dumplings
Dough:
Dumpling flour or all purpose flour: 180 g 1+1/4 cup
Corn starch: 30 g 1/4 cup
Salt: 1 g
Boiling water: 60 g, 1/4 cup
Room temperature water: 60 g, 1/4 cup
Shrimp fillings:
Small deveined shrimps: before defrosting: 500 g, after defrosting: 400 g
Regular soy sauce: 10 g, 2 teaspoons
White pepper powder: 1 g, 1/4 teaspoon
Chicken leg with skin and fat: 170 g
Five-spice powder: less than 1 g, 1/8 teaspoon
Regular soy sauce: 5 g, 1 teaspoon
Salt: 2 g, 1/4 teaspoon
Sesame oil: 12 g, 1 tablespoon
Ginger paste: 5 g, 1 teaspoon
Green onion white part: 1 small piece, 7 g
Egg white: 1
Start with boiling water, medium low heat, steam for 6 minutes

上周末按照这个方子做了蒸饺,真的非常惊艳,面团柔软,好揉好擀,馅料也特别香,而且面团跟馅料都刚刚好用完。感谢小高姐给我们带来这么好的方子,面食小白也能自己做饺子皮了

昨天試做,以前買現成的水餃皮都需要沾水捏水餃。用這個麵團桿的皮水分比較多比較軟,媽媽來幫忙的時候就說 真的不需要沾水耶。用這樣的份量我包了30顆餃子,剛好下星期一到三的午餐,再加個青菜,涼拌菜什麼的 剛剛好~謝謝小高姐❤️🥟

满满的虾仁,咬一口已感到幸福。平时家里包饺子/锅贴/云吞,虾仁都是切粒的,或对半切再切粒。 虽是冷冻虾,小高姐是豪华版的做法。我饿了,但现在是凌晨3:45。
