at ~3:34, the graphic states Pitcher MUST NOT make contact with the baserunner. This should say "Shortstop", not "Pitcher".

The 3rd one risks an obstruction call. I like doing the same thing, only the SS starts closer to the bag and he breaks in an obvious way back to his position leading the runner to think there is no pick play while 2nd baseman comes in. This is something that works if we already did a daylight play using the SS. runner figures SS is the cover, so they start with daylight. Then a couple pitches later, do your #3, only instead of breaking in the runner's way, which a good umpire will not allow, you break back to your spot and the 2nd baseman get's the pick throw.

Speaking as a high school umpire, I am awarding obstruction in the 3rd play if the freezing of the runner works as intended. By rule, the runner's going to the base beyond the last one legally obtained (3B in this case).

If the runner makes contact with the SS going around..is that defensive interferece?

It would be obstruction if the SS hinders the runner as he tries to return to second base. That was Marvin's point in his comment.
