Sheet Pan honey mustard Glazed Chicken
4 thinly cut chicken breasts - I sliced 2 large in half.
Salt + pepper to taste
1/4 cup olive oil + 2 tbsp2 tbsp dijon mustard
1 tbsp honey
1 tsp maple syrup
2 tbsp balsamic vinegar
2 cloves minced garlic
2 sweet potatoes- diced
1 lb broccoli, cleaned and cut into pieces
Preheat oven to 425° F.
Toss the sweet potatoes and broccoli with 1 tbsp oil each, place on a sheet pan in a single layer and season to taste. Bake the sweet potatoes for 15 minutes to give them a head start.
Place the chicken on a sheet pan and season with salt and pepper. Mix together the remaining olive oil, honey, mustard, syrup, vinegar and garlic. Brush the mixture evenly over the chicken.
Add the chicken and broccoli to the oven and cook everything 25-35 minutes until the chicken’s internal temperature is 165° and the potatoes and broccoli are roasted.
