Sharpening a 40 year old Gerber Knife Sharp

One of our favorite customers stops by the booth to see if Brad can sharpen some of his unique knives. Today, at the Tanner gun show in Denver, he brings by a 40 year old Gerber knife with super strong steel to see if the Sharpens Best knife sharpener can get this bad boy sharp.

    I am a professional knife sharpener of seven years. When I was first starting out, I thought this sharpener would be cool as it’s something you can easily carry around. Pretty quickly into sharpening I learned this is nothing more than a gimmick and good sales advertising. If you cut a knife in half and look down the spine of the knife, you would see a triangle shape, the goal in sharpening is to sharpen both edges of the knife until the triangle comes together to a super sharp point called the Apex of the edge. You could sharpen a knife for a really long time and it could look beautiful and shiny, but if you haven’t reached the Apex of the edge where the triangle fully comes to a point you’re never actually getting the edge sharp. Once you have reached the Apex of the edge where you can feel a tiny burr or piece of metal fold over to one side of the knife you work on using finer grits to refine the knife edge till you get it to a desired level of sharpness for the task it needs to perform. Some knives and cheaper steals you want to leave a slightly toothier edge so it will stay sturdier and bite into what you are cutting. Some more expensive knives or steals like S30V and high carbon you can get a lot sharper because of the quality of the metal. Brad Buckner doesn’t know much about knives it seems as stated in the video which you should if you are a sharpener selling knife sharpeners. Also Gerber knives are usually not very hard steels especially not that older kitchen knife. (Not bashing the guy who brought it). Brad doesn’t seem to know much about steel composition and in previous videos has admitted to using a work sharp knife sharpener to sharpen his knives. This is probably also why he demos his knife sharpener at gun shows and not blade specific shows so he can take advantage of unknowing people. Next, all knives need different angles depending on the steel quality and the task that knife is made to preform. For example cleavers are typically sharpened at a 30 degree angle because they have to cut through cartilage and bones and need a sturdier edge to do so. Whereas your standard western style kitchen knives are usually at a 20 degree angle because they need a sharper edge to do more fine food cutting. Japanese knives depending on steel quality usually need anywhere from a 14 - 17 degree angle. Lastly your hunting/ pocket knives are usually from 22-25 degrees. The problem with pull through sharpeners like this is two things, one you can’t change the angle because every knife needs a different angle and two you can’t refine the edge any more using finer grits so you can’t actually get it past a certain level of sharpness which isn’t very much. They often even damage your knife’s edge. Next, knife honing rods don’t sharpen a knife. All they do is re-align the bur on an edge so it is straight as apposed to sharpening which is removing metal and putting on a new edge. That being said don’t over sharpen knives get good at maintaining them which you would do with a strop or a steel. For the everyday sharpener who needs to sharpen their kitchen knives and maybe a pocket knife here and there look into a guided knife sharpening system. Well priced ones to look into are Work Sharp precision adjust and a Lanskey guided sharpener. My qualifications for a sharpener are that it has to be angle adjustable and be able to refine the metal edge with multiple grits or stages so that you can actually get a really sharp knife. It’s hard to hold a consistent angle when sharpening, what The Work Sharp and the Lanskey do is clamp the knife in at a certain angle and allow you to bring sharpening stones down to the blade at the exact degree you want to set it at and refine the edge for a scary sharp knife if desired. All in all don’t buy this. Spend the same amount and get a sharpener which will work on all your knives and actually get a sharp knife. One thing I have to thank pull through sharpeners and people like Brad for is keeping professional sharpeners like me in business.

    It's a shredder more than a sharpener. If you looked at the edge under magnification you could see the metal is just shredded to a jagged apex. Very hard on a knife edge to use this tool.

    The paper was roughly cut, nothing was shaved. A ragged edge cuts paper just fine for a few strokes until the burr gets ripped off. You should know this.

    And that boys and girls is how you ruin the edge on a good knife. Anyone that uses these carbide sharpeners on their good knives either doesn't know any better or hates their knives. I'm cringing every time he hits that blade with that carbide.

    @Gator-357 I was watching this in horror too. I seen a few knives ruined like this. I had to spend an hour on one trying to get it's edge right again after a family member let a guy like this "sharpen" it a few times. That was way before youtube so I could give that a bit of a pass back then. NOW, when anyone can look up a video about anything and cross check information easily, there is no excuse.

    It may be rough on an edge but for people who have problems holding an angle or figuring out a whetstone like this gentleman here, it's a better option than having a dull knife

    @@Stating_the_obvious69 That's not a problem if you use a sharpening system. You can a Lansky Sharpening system for $40 - 60 that has an angle guide. You can be a complete novice with one of them and still keep a proper angle.

    There are youtubers and commenters that claim your sharpener doesn't work.... and that your absence at knive events is a hint to support their premise... WELL... i purchased a sharpensbest sharpener... in my first attempt, the knive got somewhat sharper and then very dull... But I am a logical person, I figured that if the sharpener was able to remove enough of the edge to dullen the edge then that means with the correct application of the sharpener, it could remove the metal in the correct way to provide a sharp edge... So I worked with that knife until I figured out how to do it... It became very sharp... I was to do the paper cut i see others do..... I have since sharpened most of my kitchen knives of different varieties and types of steel. I have sharpened three pairs of scissors, and one of them was a curved pet shear, which was not able to cut my pets hair, i also sharpened a small round can opener blade with amazing results...tbh i dont have to split a hair every single cut... i will sharpen the knives again when they fall off to a point that I am not satisfied with.... I'm not here to advertise any product. And I have comments all over the Web, praising and throwing water on products... But the sharpensbest works, and that's that

    I have one that suctions onto the counter top. I use it on my kitchen knife set periodically and I love it. It gets them really sharp really fast and they stay sharp for a decent amount of time. The knives aren't real expensive ones and I cut meat and vegetables, not hair. So it works wonderfully for me.

    I totally understand the concept, and really appreciate the simplicity, but I just don't understand how you can get a clean bevel or maintain a sharp tip with these 90 degree carbide sharpeners. Clearly they work, but to me they seem more suited to emergergency sharpening, very rough tool sharpening, or even initial blade reprofiling perhaps.

    We were up in the hills above Clinton, Mt. riding atv's in early Spring. Two of us stopped in a wide spot that still had patches of snow. Third one rode up, stopped, and said "What's that ?" picking up a folded Gerber knife. Tho stainless steel, it had rust on it from lying in the snow all Winter. I took it home, cleaned the rust off, oiled it. Didn't even need a touch up, still sharp. Gave it back to it's new owner and she still uses it as her EDC knife. ☆

    You can hear him hitting it at the wrong angle when he's using the little finger sharpener shifting the blade from left to right really quickly as he sharpens it trying to make a little show for the people standing around but really he is making mistakes.

    The old Gerber used M2 High speed steel (I'm guessing 60-62hrc) and were really good. I have a couple of small fixed blades from them. The new Gerber are mostly crap with a few rare exceptions here and there. There's plenty of harder knives out there than Gerber. Anything in rex 121 at 70-72hrc (though the Rockwell C scale stops at 70hrc) is almost as hard as the tungsten carbide which is about 75-80hrc. For those who are interested vanadium and niobium carbide are 82-87hrc with vanadium being a point or 2 harder.

    Actually the old school gerber knives (before they were bought out by fiskars) were really quality knives. I am not certain about this model, but i know the gerber a400-a475 models had blades made of m2 tool steel hardened to 62 hrc.

    Sorry but this is a garbage technique. You can even hear him hitting it wrong with the baby stone after. If you looked at the blade yourself and felt it you'd know that it is basically ruined and you'll have to go 200-400 again. Also, Gerber is hard steel? WTF lmfaoooooooooooooo

    A 20 year old Gerber is still made of trash steel, you want pre 1988 or a knife with the actual knife steel stamped on it not terms like "high carbon stainless" or " surgical stainless'' these are buzz words that mean whatever, there is no standard for either of these buzz words, surgical stainless could be anywhere from 440 a to 440c and if you were proud of your knife why not tell me the steel? All of my Benchmade, spydercos, and fox knives have the composition stamped on them

    I have a corona tungsten carbide blade sharpener I bought at Lowe’s and it works just as good if not better. Use a whet stone and your knives will last longer and be sharper. If those were that good why doesn’t knife makers use them

    Why are people in this comment section so against these things. I'm a worker, I'm not gonna pull out sharpening stones while I'm on the job. Should you be sharpening like this all the time? No, but it's quick, it's easy, and when it's that sharp you won't have to re-sharpen it for a long time.

    The water coming out of the sink would have to be close the melting point of the metal of the blade to cause any changes. Some people just believe anything they hear and keep on repeating it over and over. And that "sharpening tool" is just a good edge assassin for any blade.

    I think he just didn't express himself well. It's NOT to wash them WITH A WHOLE BUNCH OF OTHER UTENSILS, ETC. Cause you'll bang the blade. Wash your knives alone, by themselves, and then immediately dry and store them. That's what he meant, not that "hot water hurts knives."

    everyone is a knife expert, if it cuts, its a good knife, a dull knife never helped anybody, now IF you value a knife by it being a heirloom or something else THEN I would say take extreme care just like anything else in life, go through a much gentle, proper and correct process to keep it sharp or to take it up a notch to your standards, the guy is selling a good product and seems like everyone wants to be a samurai these days where the sharpness matters just as much as your penis length does.

    What happened to whet stones?? With my set of soft arkansaw stone and india stone that knife would have beheaded King Kong while he was still babbling about the carbide sharpener.. Nice fellow and good presentation of bad product.

    How bad would the heat treating on your knife have to be for "hot" tap water to affect the blade in the way their talking about its laughable 😂😂

    Bet you coudlnt sharpen a rex 45 or m4 steel. M390 etc. That thing is made for kitchen knives with soft steel. Btw gerber isnt a steel. Its a knife company.

    This video is full of inaccuracies and absurdities. I tried listing what was wrong with timestamps but either YT or the person would hide it so I'll do it this way. First all, don't test how sharp a blade is by putting it to your skin. At the start of the video he only tested a small part of the blade before getting cute and running it length of it across the skin. That's dangerous Second. Don't use carbide "sharpeners." They mangle the blade. Use a stone or sharpening system. I've seen multiple blades wreck by them and even had to fix the edge on one myself. It took over an hour and was a pain in the a55! Third. Yes, if the edge is too thin, meaning the angle is lower than it should be, the more fragile the edge is. HOWEVER, you can get a "crazy sharp" edge at 16 degrees per side on a descent steel and it will not be fragile. The blanket statement of a "crazy sharp" blade getting dull quick is false. Last. Hot water coming out of your faucet WILL NOT hurt your blade. If your water heater is putting out water hot enough to make a knife blade expand, your metal pipes and faucet are not going to last long and PVC pipes will melt before the metal does.

    I wish it were a joke. The sad part is that there plenty of comments seriously congratulating this guy. This stuff is the one thing I DON"T miss from shows. I learned to stay far away from tables like that at a young age thanks to my dad. Not only will those guys wreck blades but they always over price their stuff.
