Does the edge angle set by the sharpening guide depend on the width of the knife being sharpened? Maybe the sharpening guide can't be used on thin knives?

From what ive leanred it depends on how wide your knife cause the, wider it is the better the angle, on less wider knife it will be too great of an angle

Nah it has a flexible fit. Unless you have the fattest knife in the world

That is the correct direction to move the blade. Only when using a strop would you go the opposite direction

No. That is the direction when sharpening. For stropping you do the opposite.

He's using a angle finder it seems. Some whet stones come with them.

Burrfection has a great tutorial series. I've learned most of my sharpening there. I don't use a plastic guide although I have one. The rule is the higher the grit the lower pressure you use. For the 1000 grit you should use moderate pressure and do it nice and slow, to not slip and cut yourself.

You've been ripped off. That's not a premium stone, it's a regular soft 1000/6000 stone available from ebay/amazon for like 3 bucks, lots of companies buy them in bulk, slap on their logo on the side and resell them heavily overpriced.
