Kefta:
500g mince lamb or beef
1 small onion (100g grated)
10g chopped parsley
10g chopped coriander
2 garlic cloves
1 tsp salt
1 tsp paprika
1/2 tsp cumin
1/2 tsp black pepper
1/2 tbsp olive oil
1. Grate 1 small onion, keeping the juice and mince the garlic.
2. Add all ingredients to a large bowl and knead the meat until sticky.
3. Portion into small meatball and roll into ball.
Shakshuka
4 tomatoes (grated 400g)
1 onion
20g tomato paste
1 cup water
1/2 tsp salt
1/2 tsp paprika
1/4 tsp cumin
1/4 tsp black pepper
1 tbsp olive oil
5g chopped parsley
5g chopped coriander
3-4 eggs
1. Grate the tomatoes.
2. In a saute pan, heat the oil on medium high heat. Add the onions and cook until translucent.
3. Add the tomato paste and cook off for a minute or two.
4. Add the grated tomatoes and water. Simmer for 15 minutes then add the spices, herbs and meatballs.
5. Cover the pot and cook for another 10 minutes, turning the meatballs half way through.
6. Once thickened form a well in the sauce to place each of the eggs.
7. Break an egg into each of the wells, sprinkle some salt and pepper then cover and cook for 3 minutes for runny yolks.
8. Garnish with fresh chopped herbs and serve with crusty bread.

i always appreciate how specific your recipes are. you give us tips on how to cut everything and explain how to incorporate it and give general details of what to look for when cooking. most cooking creators don’t do this but its very helpful for a beginner cook or someone unfamiliar with this cuisine and style of cooking
I am Moroccan and really appreciate you staying true to Moroccan cuisine. That being said, I never heard of shakshuka in Morocco. I know al bayd ou maticha and tighlay d maticha (eggs and tomato) It's made in a tagine and eaten with bread. A tagine keeps your food warm while you are eating, and everyone eats from the same dish The variety of the recipes depends on how much money/eggs/tomatoes you have. Bread is the staple food in Morocco. Poor man's bayd ou maticha is an omelette poured on watered tomatoes and onion gravy. You add water to make more gravy to soak your bread. You can also add water to the egg mixture to spread it thinner. Middle class bayd ou maticha is what everybody knows as shakshuka. You pour whole eggs in your tomato sauce This recipe is when you are being fancy, like having guests over or it's lunch. So, as a Moroccan, it's funny to me when Westerners introduces shakshuka as a 'budget' meal 🤣

Oh absolutely, this isn't Shakeshuka, I just used the name to describe it with something the audience would be familiar with. This is Kefta Tagine, but we've just not cooked it in a Tagine. Sorry for the confusion on that.

I tried shakshuka at a tiny brunch place in my town. I saw a picture of a tomatoey sauce sizzling in a cast iron skillet with eggs poached in it, and my mouth started to water. Now I need to go there every few weeks for my shakshuka cravings.

I add vegetarian chorizo and a little anchovies to mine its so amazing. Sometimes guanciale or prosciutto (add towards end of cooking) are also very good.

I really want to try this one, I think it's quite doable for me at home. On a completely unrelated note, I tried fuul for the first time the other day at a restaurant, it was really good! I made this recipe yesterday, and while it was DELICIOUS, there's a few things I'm planning to do differently next time. If anyone's wondering, you can find the recipe in the description! The kefta meatballs were great, no changes needed there imo! I highly recommend doubling or tripling the sauce (the shakshuka half of the recipe) because while we were eating we were wishing for more sauce. I'll also add more tomato paste and some garlic to the shakshuka as well. I used fresh roma tomatoes but I'll probably just do canned chopped tomatoes in the future to save some time. Don't bother with this if you don't like spice, but next time I'll add some chopped hot chiles to the onions. I might also add some sriracha because I like it in everything 😅

I've never seen "Finely Diced" canned tomatoes, they tend to be diced or crushed(well, others too, but those two seem adjacent). It looked like what would be labeled as crushed in the US maybe? Either way, that looks amazing and definitely something we'll be making soon.

I don't think it would matter too much, as long as they're chopped into small bits - they'll break down in the pan, just sitting in the can will leave them nice and soft. Worst case you'll just need to cook them a lil longer in the first step and develop more flavour!

Yes, just don't pulse them into a liquid, you want a very small dice size. The tomato would still have skin though, not an issue for me, but is for some people

Noo! "Mutti" canned is the biggest tomato scam. They have really bad and flovourless tomatoes and are really pricy (I did a comparsion test!).
Bro, "cook the eggs till your desired doneness" is not a helpful instruction. How many minutes till it reaches THAT level in your video? Give beginner cooks SOME reference point at least.

Around 7 minutes should usually give you a "medium". It'll depend on the size of your egg. You can probe one egg on your first try around that time and understand where you want to be for the future.

It's a visual thing and depends on the size of the eggs. For these medium eggs it took 4 minutes, but large eggs sometimes take 5
