Serabi Pandan, Indonesia Traditional Sweet Snack

This is a special episode where I can learn from ibu Lanny Rustam, or popularly called as Cik Lanny. One of Indonesia traditional snacks Master. She has been making traditional snacks for so many years and always maintain the best quality and taste. All her snacks are made with natural ingredients only. How lucky I am to have her in my kitchen today! Let's find out how to make Serabi Pandan from her.

INGREDIENTS:
50 gr rice flour
300 gr multipurpose flour
50 gr white granulated sugar
2 eggs
1 tsp dry yeast
1 tsp baking powder
750 cc coconut milk (medium consistency)
3 tbsp suji leaves juice (for coloring) - (you can substitute with food coloring or skip them all for plain/white serabi)
METHOD
In a large bowl, except the coconut milk, mix all ingredients together,
Add in coconut milk little by little and mix until all coconut milk are used and all ingredients well combined
Set the batter aside for 1 hour
Batter is ready to be cooked in a pan
