    For low carb eating, you can pretty much sub Celeriac for potatoes in recipes. I love them mashed, augratin, pureed. Delishous!

    I grew this last year, started in April. It didn't seem done by Aug or Sept (was only half a circle). So I just left it out there. It's still there. Lol. It never grew more though. I was going to compost it soon. But after hearing it has a storage life of 8 months, maybe it's still edible? What do you think? I bought this from Baker creek March, 2018. Thanks.

    I need to know WHEN to plant this please. I live in the piedmont area (Raleigh) in North Carolina where we often grow root vegetables over winter since our summers are mostly in the 90's for 3-4 mos. and our winters are fairly mild. Can someone help me figure this out?

    Hi! Celeriac and celery will be triggered to go to seed prematurely if exposed to prolonged temps in the 40s, so we suggest that you start the seeds indoors in Feb (or 10 weeks before last frost date) and transplant out after frost has passed (the seeds take a while to germinate and will start growing slowly).     If I plant a celeriac root, will it produce babies or, if I want mutiple I must sow multiple seeds and harvest them as they reach size?

    You'd want to sow multiple seeds.

    Yes, but they are best when young. Older leaves can be tough and chewy.
