Gallery wall looks fantastic! Love the idea of taking images from coffee book to post ‘em. I just did a similar job in my living room. Before committing anything on the wall, I used strings to level and map out placements, pulling the strings taut - making sure these were levelled all the way through. It’s a bit of trial and error but I thought it really helped with execution. Very well done regardless, the frames a nice touch of warmth to your bathroom.

Peak system is amazing - my bf bought it some time ago and easiness and flexibility of it is great! Gallery wall is great! I've never thought of using pictures from coffee table book to hang them on the wall - brilliant!

I do agree the tray is a bit off for the toilet. I would go with a stone tray or a unique glass tray.
